RECIPES - GARLIC & HERB CRUMB TOPPING FOR LAMB

This recipe is excellent used as a crispy crust for a rack of lamb or on oven-roasted lamb chops. Just add the topping to the lamb five minutes before the end of cooking time. This topping also works great with chicken and fish.

150g Mr Crumb Breadcrumbs
50g Butter
½ Small Onion, Finely Diced
2 Cloves of Garlic, Finely Chopped
1 tbs Fresh Parsley, Chopped
1 tsp Fresh Thyme, Chopped
1 tsp Fresh Rosemary, Chopped
50g Freshly Grated Parmesan
Freshly Ground Black Pepper

(Serves 4)

Method

  1. Melt butter in a large pan over a medium heat.
    Sautee the onions in the butter for about five minutes until soft and golden.

  2. Add the garlic and cook for a further 3 minutes.

  3. Take the pan off the heat and allow the mixture to cool slightly.

  4. Add the breadcrumbs, parmesan, parsley, thyme and rosemary to the pan and mix well. Add some freshly milled black pepper to taste.

  5. Remove the lamb from the oven five minutes before it is finished cooking. Press a layer of the topping firmly onto the joint of lamb or lamb chops. Return to oven to finish cooking.
